Ingredients:

  • 4 large banana peppers
  • 1 cup cooked quinoa
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes (fresh or canned)
  • 1/4 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the banana peppers and remove the seeds carefully.
  3. In a mixing bowl, combine the cooked quinoa, mozzarella cheese, Parmesan cheese, diced tomatoes, basil, garlic, Italian seasoning, salt, and pepper. Mix well until all ingredients are incorporated.
  4. Stuff each banana pepper with the quinoa and cheese mixture, pressing down lightly to pack the filling.
  5. Place the stuffed peppers in a baking dish and drizzle with olive oil.
  6. Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is bubbling.
  7. Let cool for a few minutes before serving. Garnish with additional basil if desired.
