Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can diced tomatoes (14.5 oz), drained
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)
  • Fresh parsley for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set aside.
  3. In a large skillet, sauté the chopped onion and minced garlic over medium heat until translucent.
  4. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, cumin, paprika, salt, and pepper. Mix well and cook for another 3-4 minutes.
  6. Fill each bell pepper with the beef mixture, pressing it down gently to pack it in.
  7. If using, sprinkle shredded cheese on top of the stuffed peppers.
  8. Place the stuffed peppers upright in a baking dish and cover with foil.
  9. Bake in the preheated oven for 25-30 minutes. Remove the foil in the last 10 minutes for a golden top.
  10. Garnish with fresh parsley before serving.
