Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 2 medium potatoes, peeled and diced
  • 1 cup shredded cheese (cheddar or your choice)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup beef broth
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Lightly brush the outside with olive oil and place them in a baking dish.
  3. In a skillet over medium heat, add olive oil and sauté the diced onion and garlic until translucent.
  4. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary.
  5. Stir in the diced potatoes, paprika, Italian seasoning, salt, and pepper. Cook for about 5-7 minutes until the potatoes start to soften.
  6. Remove the skillet from heat and mix in half of the shredded cheese.
  7. Stuff each bell pepper with the beef and potato mixture, packing it in well.
  8. Pour the beef broth into the bottom of the baking dish to help steam the peppers as they cook.
  9. Cover the dish with foil and bake for 30 minutes. Then remove the foil, sprinkle the remaining cheese on top of the peppers, and bake for an additional 10-15 minutes until the cheese is bubbly and the peppers are tender.
  10. Garnish with chopped parsley before serving.
