Ingredients:

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup cooked rice (optional)
  • 1 can (14 oz) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional for topping)
  • Olive oil for cooking
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Drizzle with olive oil and season with salt and pepper.
  3. In a skillet over medium heat, add a splash of olive oil and sauté the diced onions until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  4. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned and cooked through, about 7-10 minutes.
  5. Stir in the drained diced tomatoes, cooked rice (if using), oregano, basil, salt, and pepper. Cook for another 2-3 minutes until everything is well combined.
  6. Stuff each bell pepper with the beef mixture, packing it in tightly. Place the stuffed peppers in a baking dish.
  7. If desired, sprinkle shredded cheese on top of each stuffed pepper.
  8. Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the peppers are tender and the cheese is bubbly.
  9. Garnish with fresh parsley before serving.
