Ingredients:

  • 4 medium green bell peppers
  • 1 cup cooked quinoa
  • 1 can black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1/2 cup orange juice
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon soy sauce
  • Chopped cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the green bell peppers and remove the seeds and membranes. Set aside.
  3. In a large bowl, mix together the cooked quinoa, black beans, corn, cumin, smoked paprika, salt, pepper, and olive oil until well combined.
  4. Stuff each bell pepper with the quinoa mixture, packing it in gently.
  5. In a small saucepan, combine the orange juice, honey (or maple syrup), and soy sauce. Heat over medium heat until slightly thickened, about 5 minutes.
  6. Place the stuffed bell peppers upright in a baking dish and drizzle the orange glaze over the top of each pepper.
  7. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes until the peppers are tender.
  8. Garnish with chopped cilantro before serving.
