Ingredients:

  • 12 large portobello or button mushrooms
  • 1 pound beef mince
  • 1 cup breadcrumbs
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Clean the mushrooms and remove the stems. Finely chop the stems and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic; sauté until softened.
  4. Add the beef mince to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through.
  5. Stir in the chopped mushroom stems, breadcrumbs, oregano, thyme, salt, and pepper. Mix well and remove from heat.
  6. Fold in the mozzarella and half of the Parmesan cheese into the beef mixture until evenly combined.
  7. Stuff each mushroom cap generously with the beef mixture, packing it in slightly.
  8. Place the stuffed mushrooms on a baking sheet and sprinkle the remaining Parmesan cheese on top.
  9. Bake in the preheated oven for 20-25 minutes or until the mushrooms are tender and the tops are golden brown.
  10. Remove from the oven, garnish with fresh parsley, and serve warm.
