Ingredients:

  • 2 medium snake gourds
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 carrot, grated
  • 1 bell pepper, diced
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the snake gourds in half lengthwise and scoop out the seeds to create boats.
  3. In a saucepan, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent.
  4. Add diced tomato, grated carrot, and bell pepper, cooking until softened.
  5. Stir in the quinoa, vegetable broth, cumin, coriander, turmeric, salt, and pepper. Bring to a boil, then reduce heat and cover. Simmer for 15 minutes or until quinoa is cooked and liquid is absorbed.
  6. Stuff the cooked quinoa mixture into the hollowed-out snake gourd halves, pressing down gently.
  7. Place the stuffed gourds on a baking sheet and bake for 20-25 minutes until the gourd is tender.
  8. Remove from the oven and garnish with fresh cilantro before serving.
