Ingredients:

  • 2 cups whole grain rolled oats
  • 1 cup puffed quinoa
  • 1/2 cup whole grain barley flakes
  • 1/2 cup whole grain wheat flakes
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower oil
  • 1/4 cup honey
  • 1/4 cup grated desiccated coconut
  • 1/4 cup freeze-dried blueberries
  • 1/4 cup freeze-dried pomegranate kernels
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 teaspoon barley malt extract
  • 1 teaspoon mixed tocopherols (as an antioxidant)

Instructions:

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, puffed quinoa, barley flakes, wheat flakes, and pumpkin seeds.
  3. In a separate bowl, whisk together the sunflower oil, honey, sugar, salt, barley malt extract, and mixed tocopherols until well combined.
  4. Pour the wet mixture over the dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture evenly onto the prepared baking sheet and bake for about 20-25 minutes, stirring halfway through to ensure even toasting.
  6. Once golden brown, remove from the oven and allow to cool completely on the baking sheet.
  7. Once cooled, mix in the freeze-dried blueberries, pomegranate kernels, and grated coconut.
  8. Store in an airtight container for up to two weeks.
