Ingredients:

  • 2 cups whole grain rolled oats
  • 1 cup puffed quinoa
  • 1/2 cup whole grain barley flakes
  • 1/2 cup whole grain wheat flakes
  • 1/4 cup pumpkin seeds
  • 1/4 cup honey
  • 1/4 cup sunflower oil
  • 1/4 cup freeze-dried blueberries
  • 1/4 cup freeze-dried pomegranate seeds
  • 1/4 cup grated desiccated coconut
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar (optional, for extra sweetness)
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 325°F (160°C).
  2. In a large mixing bowl, combine the whole grain rolled oats, puffed quinoa, whole grain barley flakes, whole grain wheat flakes, pumpkin seeds, and grated desiccated coconut.
  3. In a separate bowl, mix together the honey, sunflower oil, brown sugar (if using), vanilla extract, and salt until well combined.
  4. Pour the wet ingredients over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture evenly onto a baking sheet lined with parchment paper.
  6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and fragrant.
  7. Remove from the oven and allow to cool completely on the baking sheet.
  8. Once cooled, stir in the freeze-dried blueberries and pomegranate seeds.
  9. Store in an airtight container for up to two weeks.
