Ingredients:

  • 2 cups fresh sweet corn kernels
  • 1 medium zucchini, grated and excess moisture squeezed out
  • 1/2 cup all-purpose flour (or gluten-free flour for gluten-free option)
  • 1/4 cup cornmeal
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped fresh cilantro or parsley
  • Oil for frying
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the sweet corn, grated zucchini, flour, cornmeal, eggs, baking powder, salt, black pepper, and paprika. Mix until well combined.
  2. Fold in the chopped cilantro or parsley.
  3. Heat oil in a skillet over medium heat. Once hot, drop spoonfuls of the fritter mixture into the skillet, flattening them slightly with the back of the spoon.
  4. Cook for about 3-4 minutes on each side, or until golden brown and crispy. Remove and place on paper towels to drain excess oil.
  5. In a small bowl, mix together the yogurt, lemon juice, salt, and pepper to create the dressing.
  6. Serve the fritters warm with the yogurt dressing on the side.
