Ingredients:

  • 1 can sweet potatoes, drained and mashed
  • 4 flatbreads (store-bought or homemade)
  • 1 cup goat cheese, crumbled
  • 1/2 cup pecans, toasted and chopped
  • 1/2 cup craisins
  • 2 tablespoons olive oil
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • Fresh arugula for garnish (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the mashed sweet potatoes with cinnamon, salt, and pepper until well combined.
  3. Spread a generous layer of the sweet potato mixture onto each flatbread.
  4. Sprinkle crumbled goat cheese evenly over the sweet potato layer.
  5. Top with chopped pecans and craisins.
  6. Drizzle olive oil over each flatbread.
  7. Place flatbreads on a baking sheet and bake for 10-12 minutes, or until the edges are golden and the cheese is slightly melted.
