  • 1 cup all-purpose flour
  • 1 cup mashed sweet potatoes
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk (or a dairy-free alternative)
  • 2 tablespoons butter (melted, plus extra for cooking)
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
