Ingredients:

  • 3 cups bread flour
  • 1 cup active sourdough starter
  • 1 cup warm water
  • 1/4 cup honey
  • 1 tablespoon orange zest
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg

Instructions:

  1. In a large mixing bowl, combine the bread flour, salt, cinnamon, and nutmeg.
  2. In a separate bowl, mix the warm water, honey, and orange zest until well combined.
  3. Add the active sourdough starter to the honey mixture, stirring to combine.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a shaggy dough forms.
  5. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  6. Place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise in a warm place for 4-6 hours, or until doubled in size.
  7. Once the dough has risen, gently deflate it and shape it into a round loaf.
  8. Place the loaf on a parchment-lined baking sheet, cover it, and let it rise again for 1-2 hours.
  9. Preheat the oven to 450°F (230°C) during the last 30 minutes of rising.
  10. Before baking, score the top of the loaf with a sharp knife and optionally brush with olive oil.
  11. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped on the bottom.
  12. Allow the bread to cool on a wire rack before slicing.
