Ingredients:

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup bell peppers, chopped (any color)
  • 1 jalapeño, chopped (optional for extra heat)
  • Salt and pepper to taste
  • Tortilla chips for garnish
  • Shredded cheese for garnish
  • Sour cream for garnish
  • Chopped cilantro for garnish

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked, breaking it apart as it cooks.
  2. Add the chopped onion and garlic to the pot, cooking until the onion is translucent.
  3. Stir in the black beans, kidney beans, corn, diced tomatoes, beef broth, taco seasoning, cumin, paprika, and bell peppers. If using, add the jalapeño for extra heat.
  4. Bring the mixture to a boil, then reduce heat and let it simmer for about 20-30 minutes, allowing the flavors to meld together.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with crushed tortilla chips, shredded cheese, a dollop of sour cream, and chopped cilantro.
