Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) corn, drained
  • 1 packet taco seasoning
  • 4 cups beef broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 avocado, diced
  • 1 cup tortilla strips
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup fresh cilantro, chopped

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.
  2. Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  3. Stir in the taco seasoning, diced tomatoes, black beans, kidney beans, corn, and beef broth. Bring to a boil.
  4. Reduce heat and let the soup simmer for 20-25 minutes, stirring occasionally. Season with salt and pepper to taste.
  5. Serve the soup hot, topped with diced avocado, tortilla strips, shredded cheese, and chopped cilantro.
