Ingredients:

  • 2 chicken breasts
  • 1 medium onion, thinly sliced
  • 2 tablespoons taco seasoning
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions:

  1. Heat 1 tablespoon of olive oil in a skillet over medium heat.
  2. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown, about 15-20 minutes. Remove from skillet and set aside.
  3. While the onions are cooking, season the chicken breasts generously with taco seasoning, ensuring they are well coated on both sides.
  4. In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high.
  5. Add the seasoned chicken breasts and cook for 6-7 minutes on each side, or until the chicken is cooked through and has a nice sear.
  6. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing.
  7. Serve the sliced chicken topped with the caramelized onions and garnish with fresh cilantro if desired.
