Ingredients:

  • 4 large russet potatoes
  • 2 cups beef tallow
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh chives, chopped
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • 1/4 cup olive oil
  • 1/2 teaspoon Dijon mustard

Instructions:

  1. Peel the russet potatoes and cut them into fries of your desired thickness.
  2. Soak the cut fries in cold water for at least 30 minutes to remove excess starch, then drain and pat dry.
  3. In a large pot, heat the beef tallow over medium-high heat until it reaches 350°F (175°C).
  4. Carefully add the fries to the hot tallow in batches, frying them until golden brown and crispy, about 5-7 minutes per batch.
  5. Remove the fries from the tallow and place them on a paper towel-lined plate to drain excess fat. Season with sea salt, black pepper, and paprika immediately.
  6. For the garlic herb dip, whisk together the olive oil, lemon juice, Dijon mustard, minced garlic, parsley, and chives in a bowl until well combined.
  7. Serve the tallow fries hot with the garlic herb dip on the side.
