Ingredients:

  • 2 grilled chicken breasts, sliced
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 cup mixed veggies (carrots, snap peas, etc.)
  • 2 tablespoons soy sauce (low-sodium)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ginger, grated
  • 1 clove garlic, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)

Instructions:

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the sliced red onion and bell pepper. Stir-fry for about 2-3 minutes until slightly softened.
  3. Add the broccoli florets and mixed veggies, continuing to stir-fry for another 3-4 minutes until tender-crisp.
  4. In a small bowl, whisk together the soy sauce, apple cider vinegar, ginger, and garlic to create the teriyaki sauce.
  5. Add the grilled chicken slices to the skillet and pour the teriyaki sauce over the top. Stir well to combine and heat through for about 2-3 minutes.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with sesame seeds if desired.
