Ingredients:

  • 500g kangaroo fillet, sliced thinly
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 2 green onions, chopped
  • 2 tablespoons sesame seeds
  • Cooked rice or noodles, for serving

Instructions:

  1. In a bowl, mix together soy sauce, mirin, honey, sesame oil, garlic, and ginger to create the teriyaki marinade.
  2. Add the sliced kangaroo fillet to the marinade and let it marinate for at least 15 minutes.
  3. Heat a large skillet or wok over medium-high heat. Add the marinated kangaroo and stir-fry for 3-4 minutes until browned and cooked through. Remove the meat from the skillet and set aside.
  4. In the same skillet, add the red bell pepper, broccoli, and carrot. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  5. Return the kangaroo to the skillet, tossing everything together for another minute to combine.
  6. Serve the stir-fry over cooked rice or noodles, garnished with chopped green onions and sesame seeds.
