Ingredients:

  • 2 salmon fillets
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 teaspoon minced garlic
  • 1 cup jasmine rice
  • 2 cups water
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 3 green onions, sliced
  • Sesame seeds for garnish

Instructions:

  1. In a small saucepan, combine soy sauce, mirin, honey, rice vinegar, ginger, and minced garlic. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened. Set aside.
  2. Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and water is absorbed.
  3. While the rice cooks, heat vegetable oil in a skillet over medium-high heat. Add minced garlic and sauté for 1 minute until fragrant. Add the cooked rice and toss to combine. Season with salt if desired.
  4. Preheat the grill or a non-stick skillet over medium heat. Place the salmon fillets skin-side down and brush generously with the teriyaki sauce. Cook for 4-5 minutes on each side, basting with more sauce until the salmon is cooked through.
  5. Serve the teriyaki salmon over a bed of garlic rice, garnished with sliced green onions and sesame seeds.
