Ingredients:

  • 8 oz broken spaghetti or linguine
  • 1 cup bell peppers (sliced, mixed colors)
  • 1 cup snap peas
  • 1 cup carrots (julienned)
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 tablespoon ginger (grated)
  • 1/4 cup soy sauce
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon red pepper flakes (optional)
  • 2 green onions (sliced for garnish)
  • Sesame seeds for garnish

Instructions:

  1. Cook the broken spaghetti or linguine according to package instructions until al dente. Drain and set aside.
  2. In a large skillet or wok, heat the olive oil over medium-high heat.
  3. Add the minced garlic and grated ginger, stirring for about 30 seconds until fragrant.
  4. Add the sliced bell peppers, snap peas, and carrots to the skillet. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  5. In a small bowl, mix together soy sauce, hoisin sauce, sesame oil, rice vinegar, and red pepper flakes.
  6. Add the cooked noodles to the skillet with the vegetables, then pour the sauce over the top. Toss everything together until well combined and heated through for about 2-3 minutes.
  7. Serve hot, garnished with sliced green onions and sesame seeds.
