Ingredients:

  • 400g kangaroo fillet, sliced thinly
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 100g snow peas, trimmed
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon vegetable oil
  • 1/4 cup fresh basil leaves
  • Cooked jasmine rice, for serving

Instructions:

  1. In a bowl, combine soy sauce, lime juice, fish sauce, and honey. Add the sliced kangaroo fillet and marinate for at least 30 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add minced garlic and grated ginger, sauté for 30 seconds until fragrant.
  3. Add the marinated kangaroo fillet to the skillet and stir-fry for about 3-4 minutes until browned and cooked through.
  4. Add the sliced bell peppers and snow peas, and stir-fry for an additional 2-3 minutes until the vegetables are just tender.
  5. Remove from heat and toss in fresh basil leaves.
  6. Serve hot over cooked jasmine rice.
