Ingredients:

  • 2 packs of ramen noodles
  • 1 lb chicken breast, sliced
  • 1/2 cup Thai sweet chili sauce
  • 1 cup carrots, julienned
  • 1 cup peas (fresh or frozen)
  • 1/3 cup roasted peanuts, chopped
  • 2 tablespoons vegetable oil
  • 3 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced (for garnish)

Instructions:

  1. In a large pot, heat vegetable oil over medium heat. Add the sliced chicken breast and cook until browned and cooked through, about 5-7 minutes.
  2. Add the julienned carrots and peas to the pot, cooking for an additional 3-4 minutes until the vegetables are tender.
