Ingredients:

  • 2 cups mashed sweet potatoes (cooked and cooled)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut milk (or any other dairy-free milk)
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 1 pre-baked pie crust (nut-free)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, unsweetened applesauce, coconut milk, and vanilla extract. Mix until smooth.
  3. Add the cinnamon, nutmeg, ginger, allspice, salt, and cornstarch to the sweet potato mixture. Stir until all ingredients are well combined.
