Ingredients:

  • 250g fresh tortellini (cheese or spinach filling)
  • 200g burrata cheese
  • 400g cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • 1 tablespoon balsamic glaze (optional)

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. On a baking sheet, toss the cherry tomatoes with olive oil, minced garlic, salt, and pepper. Spread them out in a single layer and roast for about 20 minutes, or until they are blistered and caramelized.
  3. Meanwhile, cook the tortellini according to package instructions until al dente. Drain and set aside.
  4. Once the tomatoes are roasted, combine them with the cooked tortellini in a large bowl. Gently mix to combine, allowing the flavors to meld.
