Ingredients:

  • 2 cups glutinous rice
  • 1/2 cup water
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon salt
  • Sesame seeds (optional, for garnish)

Instructions:

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it in water for at least 4 hours or overnight.
  2. Drain the soaked rice and steam it in a bamboo steamer or a rice cooker for about 30 minutes, or until fully cooked and sticky.
  3. Once cooked, transfer the rice to a large bowl and let it cool slightly. Using your hands, knead the rice until it becomes a smooth dough.
  4. Divide the dough into small balls (about the size of a golf ball) and flatten each ball into a thin disc, about 1/8 inch thick.
  5. In a small bowl, mix the soy sauce, mirin, and salt. Brush a thin layer of this mixture onto each rice disc.
  6. Preheat your oven to 350°F (175°C). Place the rice discs on a baking sheet lined with parchment paper.
  7. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until they are golden brown and crispy.
  8. Remove from the oven and let them cool completely. Optionally, sprinkle with sesame seeds before serving.
