Ingredients:

  • 2 large eggplants, sliced into 1/4-inch rounds
  • 2.5 cups marinara sauce
  • 1 clove garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Fresh basil leaves, for layering and garnish
  • 1 cup Mozzarella cheese, diced
  • 1 cup sliced Provolone cheese, diced
  • 2 tablespoons tomato paste

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Sprinkle the sliced eggplants with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.
  3. In a large skillet, heat 2 tablespoons of extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Add the marinara sauce and tomato paste to the skillet, stirring to combine. Let it simmer for 5 minutes, then remove from heat.
  5. In a separate skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the eggplant slices in batches, cooking until golden brown on both sides, about 3-4 minutes per side. Remove and drain on paper towels.
  6. In a baking dish, spread a thin layer of the marinara sauce mixture on the bottom. Layer half of the eggplant slices over the sauce, followed by half of the remaining sauce, half of the diced mozzarella, half of the diced provolone, and a few fresh basil leaves.
  7. Repeat the layers with the remaining eggplant, sauce, cheeses, and basil.
  8. Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.
  9. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
  10. Let it cool for a few minutes before serving. Garnish with additional fresh basil if desired.
