Ingredients:

  • 2 cups chow chow (chayote), peeled and diced
  • 1 cup carrots, diced
  • 1 cup green beans, chopped
  • 1 cup coconut milk
  • 1 tablespoon oil (coconut or vegetable)
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal (split black gram)
  • 2-3 dried red chilies
  • 1-2 green chilies, slit
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. In a large pan, heat the oil over medium heat. Add the mustard seeds and let them splutter.
  2. Add the urad dal and dried red chilies, sautéing until the dal turns golden brown.
  3. Stir in the grated ginger and slit green chilies, cooking for another minute until fragrant.
  4. Add the diced chow chow, carrots, and green beans to the pan, followed by turmeric powder and salt. Mix well.
  5. Pour in the coconut milk and bring the mixture to a gentle simmer. Cover and cook for about 10-15 minutes, or until the vegetables are tender.
  6. Remove from heat and garnish with fresh coriander leaves before serving.
