Tropical Cuban Fusion Sandwich

Ingredients:

  • 1 lb chicken breast, thinly sliced
  • 1 cup fresh pineapple, sliced
  • 1/2 cup dill pickles, sliced
  • 1/2 cup Swiss cheese, shredded
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lime juice
  • 1/4 cup fresh cilantro, chopped
  • 4 crusty Cuban rolls or ciabatta
  • Salt and pepper, to taste
  • Olive oil for grilling

Instructions:

  1. In a bowl, mix the mayonnaise, Dijon mustard, lime juice, and chopped cilantro to create the aioli. Set aside.
  2. Season the chicken slices with salt and pepper. Grill the chicken over medium heat for 5-7 minutes on each side until cooked through.
  3. In the last few minutes of grilling, add the pineapple slices to the grill and cook until caramelized, about 2-3 minutes.
  4. To assemble the sandwich, slice the Cuban rolls in half and spread the cilantro-lime aioli on both sides.
  5. Layer the grilled chicken, pickles, grilled pineapple, and shredded Swiss cheese on the bottom half of the roll.
  6. Top with the other half of the roll and grill the sandwich in a panini press or on a skillet with a weight on top until the cheese is melted and the bread is golden brown.
  7. Slice in half and serve warm.
