Ingredients:

  • 8 small flour tortillas
  • 1/2 cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 cup coconut yogurt (dairy-free, if desired)
  • 1 ripe mango, diced
  • 1 cup pineapple, diced
  • 1 kiwi, sliced
  • 1/4 cup shredded coconut, toasted
  • 1 tablespoon lime juice
  • Fresh mint leaves for garnish (optional)

Instructions:

  1. In a small bowl, mix the granulated sugar and cinnamon together.
  2. Heat a skillet over medium heat. Lightly fry each tortilla for about 30 seconds on each side until warm and just starting to puff.
  3. Once cooked, immediately sprinkle each tortilla with the cinnamon-sugar mixture, coating both sides. Set aside to cool slightly.
