Ingredients:

  • 1 can of tuna, drained
  • 1 ripe avocado, mashed
  • 1 tablespoon Greek yogurt
  • 1 tablespoon lime juice
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup diced bell pepper
  • Salt and pepper to taste
  • 4 whole wheat tortillas
  • Fresh spinach or mixed greens

Instructions:

  1. In a mixing bowl, combine the drained tuna, mashed avocado, Greek yogurt, and lime juice.
  2. Add the diced red onion, cucumber, and bell pepper to the mixture. Stir until well combined.
  3. Season the tuna mixture with salt and pepper to taste.
  4. Lay out the whole wheat tortillas and place a handful of fresh spinach or mixed greens on each.
  5. Spread an equal amount of the tuna and avocado mixture over the greens on each tortilla.
  6. Wrap the tortillas tightly, folding in the sides as you roll them up.
  7. Slice each wrap in half and serve immediately, or wrap in foil for a portable meal.
