Tuna Curry Lasagna

Ingredients:

  • 9 lasagna noodles
  • 2 cans of tuna in olive oil, drained
  • 1 cup ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
  4. In a large bowl, combine the drained tuna, ricotta cheese, chopped spinach, curry powder, cumin, coriander, turmeric, salt, and pepper. Mix well.
  5. Spread a thin layer of coconut milk on the bottom of a 9x13 inch baking dish.
  6. Layer 3 lasagna noodles over the coconut milk. Spread half of the tuna mixture over the noodles, followed by a third of the mozzarella cheese and a drizzle of coconut milk.
  7. Repeat the layering process, starting with another 3 noodles, the remaining tuna mixture, and another third of the mozzarella cheese. Top with the final 3 noodles, the remaining coconut milk, and the grated Parmesan cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  9. Let it cool for a few minutes before garnishing with fresh cilantro. Serve warm.
