Ingredients:

  • 2 cups cooked rice
  • 1 can of tuna, drained
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 green onions, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 egg, beaten (optional)

Instructions:

  1. Heat the sesame oil in a large skillet or wok over medium heat.
  2. Add the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.
  3. Stir in the mixed vegetables and cook for another 3-4 minutes until they are tender.
  4. Push the vegetables to one side of the skillet and pour the beaten egg into the other side. Scramble until fully cooked.
  5. Add the cooked rice to the skillet, breaking up any clumps, and mix everything together.
  6. Add the drained tuna and soy sauce, stirring until everything is well combined and heated through.
  7. Season with salt and pepper to taste, and garnish with chopped green onions before serving.
