Ingredients:

  • 1 cup jasmine rice
  • 2 cups water
  • 1 lb fresh sushi-grade tuna, diced
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Fresh cilantro for garnish

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and water is absorbed.
  3. In a bowl, combine the diced tuna, cucumber, bell pepper, red onion, soy sauce, sesame oil, lime juice, honey, salt, and pepper. Gently mix to combine.
  4. Once the rice is cooked, fluff it with a fork and let it cool slightly.
  5. To serve, place a scoop of jasmine rice in a bowl, top with the tuna mixture, and arrange avocado slices on the side.
  6. Garnish with sesame seeds and fresh cilantro before serving.
