Ingredients:

  • 1 lb ground turkey
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) diced tomatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chipotle powder (optional for heat)
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cups low-sodium chicken or vegetable broth
  • Fresh cilantro for garnish (optional)

Instructions:

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
  2. Add the ground turkey to the pot and cook until browned, breaking it up with a spoon as it cooks.
  3. Stir in the diced red and green bell peppers, cooking for an additional 3-4 minutes until they soften.
  4. Add the chili powder, cumin, smoked paprika, chipotle powder, salt, and pepper, stirring to combine and cook for 1 minute to toast the spices.
  5. Pour in the diced tomatoes and broth, then add the kidney and black beans. Bring the mixture to a simmer.
  6. Reduce the heat to low and let the chili simmer for about 30-40 minutes, stirring occasionally to prevent sticking.
  7. Taste and adjust seasoning if needed. Serve hot, garnished with fresh cilantro if desired.
