Ingredients:

  • 1 cup quinoa
  • 2 cups water or low-sodium chicken broth
  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 2 tablespoons tahini
  • Salt and pepper to taste

Instructions:

  1. Rinse the quinoa under cold water. In a medium saucepan, combine quinoa and water or broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Remove from heat and let it sit covered for 5 minutes.
  2. In a skillet, heat olive oil over medium heat. Add ground turkey, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until the turkey is browned and cooked through, about 7-10 minutes.
  3. In a large bowl, combine cooked quinoa, turkey mixture, cherry tomatoes, cucumber, bell pepper, and parsley. Toss gently to combine.
  4. In a small bowl, whisk together lemon juice, tahini, salt, and pepper. Drizzle over the quinoa and turkey mixture, tossing to coat evenly.
  5. Serve topped with sliced avocado and additional parsley if desired.
