Ingredients:

  • 1 lb ground turkey
  • 1 cup cooked rice (white or brown)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 ripe avocado
  • 1 lime (juiced)
  • 1/4 cup sour cream or Greek yogurt
  • Fresh cilantro for garnish

Instructions:

  1. In a large skillet, cook the ground turkey over medium heat until browned, about 7-10 minutes. Drain excess fat if necessary.
  2. Add garlic powder, onion powder, paprika, salt, and pepper to the turkey. Stir well to combine and cook for another 2-3 minutes.
  3. Stir in the cooked rice and mix until evenly distributed. Remove from heat.
  4. In a blender, combine the avocado, lime juice, and sour cream (or Greek yogurt). Blend until smooth and creamy. Season with a pinch of salt if desired.
  5. To assemble, lay a tortilla flat and spoon a portion of the turkey and rice mixture onto the center. Drizzle with the avocado lime cream and sprinkle with fresh cilantro.
  6. Fold the sides of the tortilla over the filling, then roll it up from the bottom to enclose the filling. Repeat with remaining tortillas.
