Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 4 cups fresh spinach
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions:

  1. Heat olive oil in a large skillet over medium heat.
  2. Season the salmon fillets with salt, pepper, and Italian seasoning.
  3. Place the salmon in the skillet, skin-side down, and cook for about 4-5 minutes on each side, until cooked through and golden brown. Remove the salmon from the skillet and set aside.
  4. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  5. Add the cherry tomatoes and cook until they start to soften, about 3-4 minutes.
  6. Stir in the spinach and cook until wilted.
  7. Pour in the heavy cream and add the Parmesan cheese, stirring until the cheese is melted and the sauce is well combined.
  8. Return the salmon to the skillet, spooning the sauce over the fillets.
  9. Cook for an additional 2-3 minutes to heat through.
  10. Garnish with fresh basil before serving.
