Ingredients:

  • 2 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 2 cups warm milk (about 110°F)
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • Butter for cooking
  • Maple syrup for serving

Instructions:

  1. In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the flour, sugar, and salt. Make a well in the center and add the eggs, melted butter, vanilla extract, and the yeast mixture.
  3. Mix until well combined. The batter will be thick. Cover the bowl with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  4. Heat a non-stick skillet over medium heat and melt a little butter. Pour about 1/4 cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown.
  6. Serve warm with butter and maple syrup.
