Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup vegetable oil
  • 1/2 teaspoon salt
  • Water (as needed)
  • 2 large potatoes, boiled and mashed
  • 1/2 cup green peas, cooked
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • Salt to taste
  • 2 tablespoons fresh cilantro, chopped
  • Oil for deep frying

Instructions:

  1. In a mixing bowl, combine the all-purpose flour, salt, and vegetable oil. Gradually add water to form a smooth dough. Cover and let it rest for 30 minutes.
  2. In another bowl, mix the mashed potatoes, cooked peas, cumin seeds, coriander powder, garam masala, turmeric powder, chili powder, salt, and chopped cilantro until well combined.
  3. Divide the dough into small balls. Roll each ball into a thin circle. Cut the circle in half to form two semi-circles.
  4. Take one semi-circle and form a cone shape by folding it along the straight edge. Seal the edge with a little water.
  5. Fill the cone with the vegetable filling and seal the open edge by pinching it together. Repeat with the remaining dough and filling.
  6. Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until they are golden brown and crispy, about 5-7 minutes.
  7. Remove the samosas and drain on paper towels. Serve hot with mint chutney or tamarind sauce.
