Ingredients:

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the onion, garlic, and ginger, sautéing until fragrant and the onion is translucent.
  3. Stir in the diced bell peppers and cook for about 3-4 minutes until they begin to soften.
  4. Add the cooked rice, breaking up any clumps, and mix well with the vegetables.
  5. Pour in the soy sauce and sesame oil, tossing everything together until well combined.
  6. Add the frozen peas and cook for another 2-3 minutes until heated through.
  7. Season with salt and pepper to taste, and stir in the sliced green onions.
  8. Remove from heat and garnish with fresh cilantro before serving.
