Ingredients:

  • 1 medium onion, diced
  • 2 celery stalks, chopped
  • 2 carrots, diced
  • 200g mushrooms, sliced
  • 300g Quorn mince
  • 400g canned tomatoes, crushed
  • 2 medium potatoes, cubed
  • 150g green beans, trimmed
  • 1 can of mixed beans, drained and rinsed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 cups vegetable broth

Instructions:

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion, celery, and carrot, and sauté for about 5 minutes until softened.
  2. Add the minced garlic and sliced mushrooms, cooking for an additional 3 minutes until the mushrooms have released their moisture.
  3. Stir in the Quorn mince, cooking for another 5 minutes until browned.
  4. Add the crushed tomatoes, cubed potatoes, vegetable broth, dried thyme, smoked paprika, salt, and pepper. Bring to a boil.
  5. Reduce the heat and let the stew simmer for 20 minutes, or until the potatoes are tender.
  6. Stir in the green beans and mixed beans, cooking for another 5 minutes until heated through.
  7. Taste and adjust seasoning if necessary before serving.
