Vietnamese Fried Rice with Sausage and Egg

Ingredients:

  • 2 cups cooked jasmine rice (preferably day-old)
  • 2 sausages (Vietnamese or your choice, sliced)
  • 3 large eggs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon oyster sauce
  • Salt and pepper to taste
  • Fresh cucumber slices for serving

Instructions:

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the sliced sausages and cook until browned, about 5 minutes. Remove and set aside.
  2. In the same skillet, add another tablespoon of oil. Add the minced garlic and diced onion, sautéing until fragrant and the onion becomes translucent.
  3. Push the onion and garlic to the side of the pan and crack the eggs into the skillet. Scramble the eggs until just set, then mix them with the onion and garlic.
  4. Add the cooked jasmine rice to the skillet, breaking apart any clumps. Stir-fry for about 3-4 minutes until the rice is heated through.
  5. Stir in the cooked sausage, soy sauce, oyster sauce, and season with salt and pepper. Mix well and cook for an additional 2 minutes.
  6. Remove from heat and garnish with chopped green onions. Serve with fresh cucumber slices on the side.
