Ingredients:

  • 2 cups canned or cooked white beans (such as cannellini or great northern)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/4 cup fresh dill, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • Fresh dill sprigs for garnish

Instructions:

  1. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  2. Add the minced garlic, dried oregano, and red pepper flakes. Cook for another minute until fragrant.
  3. Stir in the cooked beans, and season with salt and pepper. Cook for 5-7 minutes, allowing the beans to warm through and absorb the flavors.
  4. Meanwhile, in a small bowl, combine Greek yogurt, lemon juice, lemon zest, and a pinch of salt. Mix well until smooth.
  5. Remove the skillet from heat and stir in the fresh dill.
  6. To serve, place the warm beans on a plate, drizzle with the yogurt dressing, and garnish with dill sprigs.
