Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water or vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 1 teaspoon lemon zest
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and liquid is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and allow to cool.
  3. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, bell pepper, red onion, parsley, mint, and feta cheese if using.
  4. In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve chilled or at room temperature.
