Ingredients:

  • 8 oz pasta (spaghetti or penne)
  • 1 lb ground beef
  • 1 medium zucchini, diced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and cook for an additional minute until fragrant.
  4. Add the ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  5. Stir in the diced zucchini and broccoli florets, and cook for about 5 minutes until the vegetables are tender.
  6. Add the diced tomatoes and Italian seasoning, and simmer for another 5 minutes. Season with salt and pepper to taste.
  7. Combine the cooked pasta with the beef and vegetable mixture, tossing gently to combine.
  8. Serve hot, topped with grated Parmesan cheese.
