Ingredients:

  • 1 pound ground turkey
  • 2 medium zucchinis, shredded
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  3. Add the ground turkey to the skillet, cooking until browned. Season with salt, pepper, oregano, and basil.
  4. In a large mixing bowl, combine the shredded zucchini, drained diced tomatoes, and cooked turkey mixture.
  5. Spread the mixture evenly into a greased 9x13 inch baking dish. Pour the tomato sauce over the top.
  6. Sprinkle shredded cheese evenly over the sauce.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  8. Let it cool for a few minutes before serving.
