Ingredients:

  • 1 pound ground turkey
  • 2 medium zucchinis, sliced
  • 1 can (15 oz) diced tomatoes, drained
  • 1 cup tomato sauce
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until translucent.
  3. Add ground turkey to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
  4. Stir in the diced tomatoes, tomato sauce, oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes.
  5. In a greased baking dish, layer half of the sliced zucchini at the bottom.
  6. Spread half of the turkey mixture over the zucchini, then repeat with the remaining zucchini and turkey mixture.
  7. Top with shredded mozzarella cheese.
  8. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving. Enjoy!
