Zucchini & Onion Pasta with a Touch of Lemon

Ingredients:

  • 200g pasta (spaghetti or penne)
  • 1 medium courgette, sliced
  • 1 large onion, thinly sliced
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Parmesan cheese, grated (optional)

Instructions:

  1. Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Add the sliced courgette and minced garlic to the skillet. Sauté until the courgette is tender, about 3-4 minutes.
  4. Stir in the cooked pasta, lemon juice, salt, and pepper. If the mixture seems dry, add a splash of reserved pasta water.
  5. Remove from heat, and garnish with fresh basil and grated Parmesan cheese if desired. Serve immediately.
