Ingredients:

  • 1 lb boneless, skinless chicken thighs
  • 1 cup BBQ sauce (store-bought or homemade)
  • 8 small corn tortillas
  • 1 cup red cabbage, finely shredded
  • 1 cup green cabbage, finely shredded
  • 1 carrot, grated
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions:

  1. Preheat the grill to medium-high heat.
  2. Season the chicken thighs with salt and pepper, then brush with olive oil.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked. Brush with BBQ sauce during the last few minutes of cooking.
